Scottish tablet recipe… grandads foolproof method!!

Growing up in Scotland with generations of family members who are Scottish I had the pleasure of trying Scottish recipes which I have had passed down through the generations on to me and i’m teaching my daughters too.  I have a few people who follow me who aren’t Scottish and so I thought id share my family recipes with you all I am going to be posting one recipe every Thursday morning so follow along and get involved in making these tasty meals and treats!!

This week I will be sharing my recipe for good old Scottish tablet:

IngredientsMakes around: 35 squares
  1. 900g (2 lb) caster sugar.
  2. 125g (4 1/2 oz) butter.
  3. 1 tin condensed sweetened milk.
  4. 150ml (1/4 pt) milk.
  5. 1/2 teaspoon vanilla extract.

Prep:5min  ›  Cook:1hr  ›  Extra time:1hr setting  ›  Ready in:2hr5min first line a baking tray with parchment paper I found this the easiest to remove the tablet once cool.

In a large deep pot place all ingredients except vanilla over medium heat until all melts, stirring frequently DO NOT WALK AWAY if you do not keep stirring it will stick to the bottom of the pan and always keep it at the same temp do not turn it up to cook quicker doesn’t work at all. let it simmer away until a nice golden brown colour. it will bubble up quite high just make sure to keep an eye on it so it doesn’t start to burn at the bottom. now add vanilla extract and stir in well.


Now take off the heat and beat the mix until your arm is aching believe me it can take a while and it hurts haha but the mixture will start to thicken as you beat the air into it. just keep on stirring until nice and thick. once thick pour the mixture into the baking tin and leave to cool.


once the ixture begins to Harden cut into squares it will make it easier once fully cooled down to cut.  once you know the tablet is fully cooled usually about an hour or so remove from the baking tray serve and enjoy this famous Scottish sweet!!
